How to make an Almond Flour Pear Cake
Normally a pear cake is not that popular. When you think of simple cake recipes with fruits that are in season in January, a classic apple cake immediately comes to mind. So I made this very delicious and fluffy almond pear cake, which is also super quick and really tasty. Due to the high proportion of almonds, the cake is easy to digest and not heavy. It is also beautiful to look at, just a classic cake that grandma would have baked and is ideal for when the family comes to visit on Sunday.
First
Mix butter and sugar in a bowl, then add the two eggs one after the other and mix. In a separate bowl, mix together the almond flour, flour and baking powder, then sift into the butter mixture. Add a pinch of salt and vanilla extract. Preheat the oven to 170C.
Second
Peel the pears, cut off the ends and cut in half, remove the seeds. Cut into thin strips, not cutting into one end. However, this is up to you.
Third
Grease a cake tin (20cm) with baking parchment and a little butter, spread the pastry on it and smooth everything down with a spoon. I used a thin wooden stick to help me and spread it through the mixture in a circular motion so that everything is evenly distributed.
Fourth
Now place the pears in the pastry and press them in lightly. Bake in the oven for 40 minutes at 170C. When cool, sprinkle with icing sugar or serve with a scoop of vanilla ice cream or whipped cream.

The cake was really quick and easy to make. The dough was so airy and not dry at all. The next day it was even better! I will make it more often now, maybe mix it with apples. Thanks for the recipe!
