How to make Galette des Rois (King´s Cake)

You couldn’t start the new year more royally than with the famous French Galette des Rois (Kings Cake). On 6 January we honour the three kings and so it is a tradition in France to eat this cake in the family. Actually, a small porcelain figurine is hidden in the cake and whoever finds it is the king of the day.

In this recipe, however, no figurine is hidden, but you are free to add it to the cake (to do this, turn the cake upside down and make a small hole, “glue” it shut with the excess dough). My cake is a little smaller, so it is ideal for singles who don’t know who will eat the rest of the cake. And well, as it is in the New Year, one has resolved to start healthier 😉

To give the cake a slightly fresh touch, I didn’t spread it with sugar syrup as usual, but with orange syrup.

First

To prepare the filling, it is necessary to mix the butter with the icing sugar, then add the flour, almond flour, the two eggs,curd and two tablespoons of rum and mix well.


Pasty with Almond Mixture

Second

Spread one layer of puff pastry on the baking tray lined with baking paper and lightly press a circle with the help of a large pot lid. Now spread the almond mixture inside the circle, leaving 2cm to the edge of the circle.

Place the second puff pastry over the top and press down with your fingers where the two pastries meet. Now place the lid of the pan centrally over the heap and press it down. Remove carefully. Cut with a knife along the circular line left by the lid. Remove the excess dough (you can make crossiants out of it).

Now spread the egg yolk over the cake with a brush. Poke a hole in the middle of the cake and draw curved lines downwards from there. The design of the cake is up to you. Then poke a total of 4 more small air holes along the lines, not yet visible. When you are ready, bake the cake in the oven for 20 minutes at 180 degrees.

while the cake is still in the oven, take a whole orange (wash it hot beforehand) and grate the peel. Squeeze out the juice and set aside. Bring the sugar, water, orange zest and orange juice to the boil and, as soon as the liquid thickens, sieve it to obtain a clear orange syrup. Remove the cake from the oven after 20 minutes and spread the orange syrup over it. Now place in the oven for another 10 minutes. After the cake has been in the oven for a total of 30 minutes, take it out, let it cool and enjoy it like a king.

  • Step 4 Place the second puff pastry over the top and press down with your fingers where the two pastries meet. Now place the lid of the pan centrally over the heap and press it down. Remove carefully.
  • Step 5 Cut with a knife along the circular line left by the lid. Remove the excess dough (you can make crossiants out of it).
  • Step 6 Many people turn the cake over again, which I did not do in this case, but it does not matter. Now press firmly with two fingers along the edge and cut the dough between the fingers so that it looks like a flower.

  • You don’t just have to bake this cake on the holiday. It’s one of my favourite cakes and I also like to make it just for the weekend. Your recipe is really good and really easy. Maybe next time you can make a different filling? For example with pistachios?
