Ingredients
  • 70g cookies
  • 20 g melted butter
  • Cheesecake:
  • 200 g cream cheese
  • 50 g mascarpone
  • 50 g granulated sugar
  • 30 ml hot water
  • 5 g leaf gelatine
  • 150ml cream
  • 10 g granulated sugar
  • 40 ml lemon juice
  • lemon curd:
  • 1 egg
  • 50 g granulated sugar
  • 50 ml lemon juice
  • 50 g unsalted butter
  • 2 g leaf gelatine
  • 10 ml hot water
  • Mascarpone Topping:
  • 50 g mascarpone
  • 50ml cream
  • 10 g granulated sugar
Directions
  • Step 1 First chop the biscuits very small and then mix with 20g of melted butter. Spread the cookie base on the bottom of the mold and press well.
  • Step 2 Prepare a small bowl of ice cold water and add five sheets of gelatin.
  • Step 3 Mix 200g cream cheese and 50g mascarpone in a bowl until creamy. Then add 50g of sugar and mix everything together.
  • Step 4 Now take the gelatin out of the cold water and dissolve it completely in 30 ml of hot water. The consistency should be liquid like water, now add the melted gelatin into the fresh cheese cream and stir everything together.
  • Step 5 Now squeeze 40 ml of lemon juice and sieve the juice into the cream cheese mixture.
  • Step 6 In a separate bowl, whip 150 ml of cream until stiff and then add it to the other mixture and mix everything again very well. Spread the mixture on the cake base, making sure that the surface is smooth before putting the cake in the fridge for 2 hours.
  • Step 7 Add two sheets of gelatin in ice cold water.
  • Step 8 Beat an egg until creamy and add 50 g of sugar and mix well until you get a creamy consistency. Now prepare a small saucepan and strain the egg mixture into the saucepan. Now also add 50 ml of lemon juice, making sure that everything is well mixed so that we do not have lumps in the mass. Now add 50 g of solid butter and heat everything on a low heat. Stir all the time until the cream slowly becomes more solid.
  • Step 9 Now put the gelatin from the cold water into 10 ml of hot water until it is completely dissolved before adding it to the pot. Stir everything well, it should be a creamy but rather liquid consistency.
  • Step 10 Take the cake out of the fridge and make the last layer on the cake, make sure that everything is well and evenly covered before you put the cake in the fridge for 5 hours.
  • Step 11 Either you leave the cake as it is or you decorate it again with a mascarpone cream. Mix 50 ml of cream with 50 g of mascarpone and 10 g of sugar. Mix everything until stiff and put the cream in a piping bag. Now you can choose any attachment and deco and decorate the cake as you like.
