How to make fluffly Blueberry Cupcakes
Blueberry cupcakes are probably the one of the most popular cupcakes. No wonder they are easy to make, look good and taste delicious. Cupcakes are also great as a snack, or for school or work, here I would just replace the sugar with honey, and make them completely with almond flour. You can also make them low carb if you also replace the sugar. I added oat milk and didn’t use oil and I have to say, they taste amazing, they are super fluffy and they are not heavy in the stomach. Comment, what type of Cupcakes do you like most.
First
Add sugar, vanilla sugar and an egg into a bowl. Mix everything briefly and add almond flour as well as the other dry ingredients.
Second
Now add fresh blueberries to the dough and mix carefully.
Third
Pour the finished cupcake dough into the cupcake tins, and place them for around 20 minutes at 180C into the oven.
Fourth
For the frosting whip the cream until stiff and mix it with the mascarpone and the rest to a creamy consistency
Fifth
Fill the frosting in a piping bag before you put it on the cupcakes, you can top the cupcakes with blueberries.

Ingredients
- 110g sugar
- 10g vanilla sugar
- 1 egg
- 240ml milk
- Pinch of salt
- 150g flour
- 130g almond flour
- 1 packet baking powder
- 125g fresh blueberries
Mascarpone Vanilla Frosting
- 200ml cream
- 150g mascarpone
- 2 tsp vanilla extract
- 1 tsp cream stiffner
- some sweetener if you like

- Bowl
- Mixer
Ok wow, this Frosting was so yummy, i had some leftover and ate it with some raspberries *___*
I put exactly the same amount of sweet vanilla to it and it was perfect and not to sweet.
They are really easy to make, my first ever cupcakes :))
