How to make fluffly Blueberry Muffins
Blueberry muffins are probably the most popular muffins. No wonder they are quick, look good and taste delicious.
Muffins are also great as a breakfast snack, or for school or work, here I would just replace the sugar with honey, and make them completely with almond flour. So you can also make them low carb if you also replace the sugar. I added oat milk and didn’t use oil and I have to say, they taste amazing, they are super fluffy and they are not heavy in the stomach. which muffins do you like best? Write it in the comments.
First
For the dough, start with the sugar, vanilla sugar and an egg in a bowl. Mix everything together briefly and add almond flour as well as the other dry ingredients. The result should have a creamy consistency.
Second
Now carefully add the fresh blueberries. Then mix them with the dough, being careful to keep the blueberries whole.
Third
Pour the finished batter into the muffin tins, then place the baking tray in the oven for 20 minutes at 180C. After the muffins are ready, remove from the oven and leave to cool briefly.

My favourite muffins are the chocolate ones, but blueberry is also way ahead. I’ll try them out at the weekend. Thanks for the easy recipe, I think I’ll choose a plant-based milk too.
